How to barbecue over gas

Light the burners and turn them up to full power. If there’s a hood, close it – this will help the barbecue heat up more quickly.
The temperature needs to reach 200-250°C before you start cooking. Depending on how powerful the barbecue is and whether or not it has a hood, it will take around 10 – 20 minutes to heat up.
Turn the heat down a little and place food at the centre of the grill. Cook meat until it has browned evenly on all sides, then lower the heat and close the hood to help food cook through.
Top gas tips:



  • Some gas models come with lava rocks – these vaporise meat and marinade juices dripping from the grill which infuses food with a deliciously char-grilled flavour.
  • Choose a powerful gas barbecue that can generate a high heat so food cooks through quickly. This will help meat retain its moisture and flavour.
  • Warming racks on gas barbecues are ideal for resting quick-cooking food away from the heat while meat is finishing off on the grill.

Grilling meat

Whether you’re cooking over gas or charcoal, make sure that pork, kebabs, chicken and anything made from minced meat – such as sausages and burgers – is cooked all the way through before you eat it.
Check that there are no pink sections of meat in the centre or near the bone, and that meat juices are clear. Remember that charred meat may look cooked, but it can still be underdone in the middle.

                              

Choosing and preparing barbecue food

Sausages, burgers, steak, fish, vegetables… you can cook anything on a barbecue. You can even roast a whole chicken on a charcoal kettle.  
Rump steak is a great choice for the barbecue – it’s juicy, tender and cheaper than fillet. Or look for tasty and inexpensive hanger steak at your butchers – but marinade it first to soften it.
If you want to barbecue larger cuts of meat choose a powerful barbecue with a hood – you’ll need this for meat to cook all the way through to its centre. Butterfly chunkier pieces of meat to make them flatter and thinner – this will help them cook more quickly which will help it stay tender. You can usually ask a butcher to do this for you.
Season unmarinated meat with salt and pepper to enhance the char-grilled flavour. It’s best to season just before you start cooking – if you do it too far beforehand it will dry the meat out.
Ready-made marinades often contain a lot of sugar - this caramelises to add a lovely flavour but will quickly cause food to burn at the edges, so you’ll need to keep an eye on it on the grill.
Choose acidic marinades as these will naturally tenderise meat. Look for recipes containing papaya as this fruit is one of the best tenderisers around.

how to check Barbecue safety before you cook!

If you haven't used your barbecue recently:



  • Check the gas cylinder - a gas cylinder must not be refilled if it has not been tested for over 10 years or if the cylinder has been damaged. Exchange LP Gas cylinders at a reputable supplier to avoid this problem
  • Check the hose to make sure it has not perished
  • Check connections to make sure that they are tight - get into the habit of doing this regularly

If you have a new barbecue:

New barbecues need to be assembled carefully. Follow the manufacturer's instructions and check that your connections are tight. Look before you cook and make it a regular habit.

Check for leaks using soapy water

Check the hose and regulator connections by spraying them with a soapy water solution like common household detergent. Bubbles will form if gas is escaping. If in doubt, turn off the gas and contact a licensed gasfitter. Leak-test the connection to the cylinder every time you connect it - serious leaks are common and can be dangerous.
                         

Use the right type of gas

Check the data plate on your barbecue to find out what type of gas it uses. Never use a barbecue on the wrong gas and don't use Autogas, as it differs from LP and natural gas. It is not safe (or legal) to fill a barbecue cylinder at an Autogas dispenser.

Use your barbecue in an open and clear space

Gas appliances need adequate ventilation. Barbecues must not be used indoors or in a confined space, where they might cause toxic fumes and smoke or start a fire. To prevent a fire hazard ensure there is adequate clearance around the barbecue. Never use a barbecue designed for outdoor use inside a caravan, tent, garage or house.

Operate your barbecue properly and safely

Use the correct cooking tools and wear an apron to protect from being splashed by hot fat. Remove all excess fat from the barbecue after each use to prevent a fire hazard. Do not use barbecues in windy conditions as the burners may blow out, risking a gas leak - barbecues do not have a safety device to turn off the gas when the flame goes out.

   If your barbecue grill sits in an enclosed area or an enclosed cart, the leaking propane or natural gas can collect inside. This can cause the collected gas to explode if you have a combustion source near. So, one of the most important things you can do is regularly check for propane or natural gas leaks. The gas leak test is an easy technique and simple to do and only takes a few minutes.

    





DO: Get supplies

You will need a small bowl, some dish soap or liquid soap, water, and a small basting brush or paint brush. Take the bowl and put about a half cup of water in it. Add a drop or two of liquid soap and then mix lightly until all the water is soapy.

DO: Propane

Make sure the propane or natural gas is connected to the barbecue grill and is turned on. You want the gas to pressurize in the lines and fittings while you are doing the test.
                                     

DO: Apply soapy water

Take the small brush and cover all the lines and fittings. There will be small bubbles around the area you brushed. Watch for new bubbles forming. If new bubbles form you have a leak. If no bubbles form, you do not have any leaks. If the hose has a leak, you need to replace it. If the leak is at a fitting, you often can take off the connection and then reconnect it to fix the problem.

DON'T: Light the grill

If you light the grill while you have a leak, it can make the gas explode. If there is a lot of gas, you could even burn down your house. You could also get hurt. So, until you check for leaks, don't light the grill.

DON'T: Smoke

A cigarette has an open ignition source. If you happen to drop ashes with live embers down in an area with gas, it can explode. If the cigarette falls out of your mouth and enters a place with gas, it can also cause an explosion. Both can injure you and cause fire damage. Don't smoke near the grill until you know there are no leaks.
                                               

DON'T: Open flames

Don't have any open flames, like candles, nearby before or during the time you are checking for leaks. An open flame can make the gas burn just like when you light a propane stove with a match. Other open flames are lighters, matches, and outdoor fireplaces.
Checking for a gas leak on your gas barbecue grill is an easy technique. You get soapy water and brush it on all the hoses and connections. If you see bubbles forming, you have a leak. Both hoses and connections are easy to fix. Fix all leaks before lighting your barbecue grill. It's a good idea to do a gas leak test about once a month or whenever you change the connections.

How to Clean and Maintain a Gas Grill

There is perhaps no finer way to spend a summer evening than grilling and enjoying the fruit of your efforts with friends and family. Doing so of course requires a properly functioning grill. Gas grills often have a long lifespan, but that can be shortened if you don’t clean and maintain yours regularly. Burners can get dangerously clogged, gunk can build up so much that it causes small fires, and rust can take over your once-beautiful cooking machine. Luckily, maintenance and cleaning doesn’t take too much effort. Read on to find out how to keep your gas grill functioning smoothly and belching meat-searing fire.

Maintaining Your Gas Grill

There’s really not a whole lot you need to do to keep your grill in tip-top shape. Following the few tips below will ensure years and years of successful and safe cooking:
1. Routinely check for propane leaks. On a monthly basis, run some soapy water along the gas line and connections (with the propane turned on). If you see bubbles form, you know there’s a leak, and you either need to tighten the connection or replace the line.
2. Cover your grill. Keep your grill covered when not in use. Most brands make their own covers, which of course have to be bought separately, but they’re well worth it. Protecting your grill from the elements keeps it from rusting and becoming dirtier than it needs to be.
3. Clean it regularly. Beyond the detailed cleaning below — which should be done every few months when grilling a lot — you should also spot clean it after each use. Brush the grates, and wipe down the exterior with some Windex, and you’re good to go. It’s also a good idea to turn the grill up to high for 15 minutes once a week or so to burn off some of the excess gunk. Doing this ensures that grime doesn’t build up too much, which can happen quicker than you expect it to.

Experts seem to agree that your grill only needs to be deep cleaned 1-2 times per year, but I’d say that with regular year-round grilling it should be done every few months. Veggies fall through the grates, chunky marinades splatter, and grease from your burgers and steaks build up rather quickly. You can often use the eye test and tell when it needs to happen. You’ll see how dirty my own grill was with about 9 months between cleanings; it should have been done quite a bit sooner. If nothing else, do it before before and after the high holy summer grilling season.
All you need is a good grill brush, a bucket of soapy water, another empty bucket for your debris, and an old sponge that you don’t plan on using again.

These bad boys are your burner protectors. They do just that -- protect your burner mechanisms from grease and other matter that could clog them. As you can imagine, these protectors get very dirty. It's their job to do so. Luckily, in most grills they are just set in little ledge and pull right out.

5. Put your grill back together and enjoy some tasty victuals!
